OLIVE OIL: SO LITTLE... BUT SO MUCH!
Why should you eat olive oil? And the one selected by Baouw in particular, concocted almost to measure la maison d'huile artisanale Chris & Olive ? Nutritional answer below. Basically, olive oil is very rich in omega-9 fatty acids. The first simple observation is that these formidable omega-9s serve to counterbalance excess saturated fatty acids, which are very harmful to health, including cardiovascular problems (stiffening of the artery walls). In excess, these saturated fatty acids found in cold meats, meat, cheese and industrial dishes also have a pro-inflammatory tendency. The omega-9 fatty acids found in olive oil help to buffer these effects and balance our bodies. ‘The worst thing about saturated fatty acids is when they are hydrogenated,’ warns Benoît Nave, the Baouw nutritionist, ’when they are heated, for example. Their chemical molecule is modified. You end up with what are known as ‘trans’ fatty acids. And this is downright poisonous: it's the case with most margarines and industrial pastries. So don't eat them.

It is a judicious way of balancing the protein-carbohydrate-lipid ratio of the bars. ‘It's worth remembering the role of quality lipids in sports performance: for all efforts other than those of very short duration, part of the energy supplied will come from lipids. The longer the effort, the greater the proportion (this is the principle on which the famous ketogenic diet is based). For general well-being, without even mentioning sport, we need cholesterol (good cholesterol!) to make our hormones; in other words, to ensure that our body performs its functions optimally in all areas. Stress management, mood management, regeneration... lipids play a major role’, says nutritionist Baouw. So don't forget, if you want to stay in shape... put some oil in!
